Ingredients

- 1 medium butternut squash, peeled and cubed
- 8 oz pasta (penne or fusilli)
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried sage
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Roast for 25 minutes until tender.
- Cook pasta according to package instructions. Drain and set aside.
- In a pan, sauté garlic in olive oil for 1 minute. Add roasted squash, cream, and sage. Cook for 3-4 minutes.
- Blend the mixture until smooth. Toss with cooked pasta and Parmesan cheese. Serve warm.

- Add a pinch of nutmeg for extra flavor.
- Substitute coconut milk for a dairy-free option.
