Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked chicken, diced (optional)
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup corn kernels
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix chicken, black beans, corn, bell peppers, onions, cumin, chili powder, salt, and pepper.
  3. Place tortillas on the baking sheet. Sprinkle half of each tortilla with cheese.
  4. Spoon the filling mixture over the cheese, then top with remaining cheese.
  5. Fold the tortillas in half, pressing lightly to seal.
  6. Brush the tops with olive oil for crispiness.
  7. Bake for 10-12 minutes, flipping halfway, until golden and crispy.
  8. Slice into wedges and serve with salsa or sour cream.
