Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Season chicken breasts with Cajun seasoning, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook chicken for 5-6 minutes per side until fully cooked. Remove and set aside.
  4. In the same skillet, sauté bell peppers and onion for 3-4 minutes until slightly softened.
  5. Add garlic and cook for 1 minute.
  6. Slice the cooked chicken and return to the skillet. Stir to combine.
  7. Garnish with fresh parsley if desired. Serve hot.

Notes

  • Adjust Cajun seasoning to your preferred spice level.
  • For extra heat, add a pinch of cayenne pepper.
