- 2 boneless, skinless chicken breasts
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- Season chicken breasts with Cajun seasoning, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken for 5-6 minutes per side until fully cooked. Remove and set aside.
- In the same skillet, sauté bell peppers and onion for 3-4 minutes until slightly softened.
- Add garlic and cook for 1 minute.
- Slice the cooked chicken and return to the skillet. Stir to combine.
- Garnish with fresh parsley if desired. Serve hot.
Notes
- Adjust Cajun seasoning to your preferred spice level.
- For extra heat, add a pinch of cayenne pepper.
- Serve with rice or a fresh salad.
