Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Butterfly each chicken breast and pound to 1/4-inch thickness.
  3. Mix parmesan, garlic, parsley, oregano, salt, and pepper in a bowl.
  4. Spread the mixture evenly over each chicken breast.
  5. Roll up each breast tightly and secure with toothpicks.
  6. Brush with olive oil and coat with breadcrumbs.
  7. Place seam-side down in a baking dish.
  8. Bake for 25-30 minutes until golden and cooked through.
  9. Let rest for 5 minutes before serving.
