Description

Ingredients

  • 4 boneless, skinless chicken
  • 4 medium potatoes, diced
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix potatoes with 1 tbsp olive oil, half the garlic, salt, pepper, and paprika.
  3. Spread potatoes on a baking sheet and roast for 20 minutes.
  4. In the same bowl, toss chicken with remaining olive oil, garlic, oregano, and Parmesan.
  5. Place chicken on the baking sheet with potatoes and roast for another 25 minutes, or until chicken is cooked through.
  6. Serve hot.
