Description

A delicious Greek-inspired meatball bowl with tzatziki, rice, and fresh vegetables.


Ingredients

  • 500g ground beef or lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 egg
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1 cucumber, sliced
  • 1 tomato, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup tzatziki sauce
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Combine ground meat, onion, garlic, oregano, cumin, egg, breadcrumbs, salt, and pepper in a bowl.
  3. Shape into small meatballs and place on a baking sheet.
  4. Bake for 20-25 minutes until cooked through.
  5. Divide rice between bowls.
  6. Add meatballs, cucumber, tomato, and red onion.
  7. Drizzle with tzatziki sauce.
  8. Garnish with fresh parsley.
