Ingredients

  • 34 pounds corned beef brisket
  • 4 cups beef broth
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 tablespoons pickling spice
  • 4 carrots, cut into chunks
  • 4 potatoes, quartered
  • 1 head of cabbage, cut into wedges

Instructions

  1. Place the corned beef in the instant pot.
  2. Add beef broth, onion, garlic, and pickling spice.
  3. Seal the instant pot and set to cook on high pressure for 90 minutes.
  4. Once done, allow the pressure to release naturally for 15 minutes, then quick release any remaining pressure.
  5. Add carrots, potatoes, and cabbage to the pot.
  6. Seal and cook on high pressure for an additional 10 minutes.
  7. Release pressure and serve.
