Ingredients

- 250g mascarpone cheese
- 3 large eggs
- 100g granulated sugar
- 200ml strong coffee, cooled
- 24 ladyfinger biscuits
- 2 tbsp cocoa powder
- 1 tbsp coffee liqueur (optional)
Instructions
- Separate egg yolks and whites.
- Beat yolks with sugar until pale.
- Fold in mascarpone gently.
- Whisk egg whites to stiff peaks.
- Combine mixtures carefully.
- Dip ladyfingers briefly in coffee.
- Layer soaked ladyfingers and cream.
- Dust top with cocoa powder.
- Chill for 4 hours before serving.
